I'm not a vegetarian by any means, far from it, but I have had vegan chili that was pretty damn good. It's so full of flavor from the non-meat ingredients that you probably wouldn't taste meat flavor anyway, so it's only a matter of getting the texture right, and good chefs/cooks know how to do that. Not sure it would be any cheaper though.
