I was born and raised in Haikou, Hainan. So awesome to see you investigate the most authentic Hainanese Chicken and go all the way to Wenchang lol. Though you can get some pretty decent Wenchang Chicken in Haikou itself. I do think Singapore has a “cleaner” version (without the bones and stuff) of Hainanese Chicken. Things showed up in your video besides the chicken: Get a taxi > 打的 “Bobba Tea Tube” I know that’s a joke lol but it’s a various metal tube wholesale storefront. aged salt lemonade > 老盐柠檬水 “Tea House,” is actually “Granpa Tea” or “Papa Tea” > 老爸茶 Get a three-wheel ride > 坐三轮机车 You should try a bowl of fresh-coconut-water-based 清补凉 “cool you down” next time you visit!

Oh man.. that coffee shop in Hainan reminds me so much of old school Chinese coffee shops in Malaysia. Wow the architecture of the buildings in Wenchang.. it reminds me of the old buildings that the British left behind in Malaysia. Hainan feels like a place that I would feel very at home. Singaporean tip to getting even more kick out of your chicken rice: Together with the chili sauce, a minced ginger paste and a thick black soy sauce is also always provided. Note, this thick black soy sauce is NOT the kind you find in sushi bars, etc. It is a little sweeter from molasses and less salty that the kind commonly found in Chinese/Japanese restaurants (which is known in Singapore as "light soy sauce" 酱 清). Mix in the ginger and thick black soy with your chili sauce to taste. I guarantee it will take the flavour to a whole new level. Also my personal favourite, to put on the thick black soy sauce liberally on the rice in a big black spiral. It adds even more umami, and a certain richness to the rice. Try it, you might love it as much as I do.

I've been waiting to see your next video and now life is good again. I love all things chicken and can only imagine how satisfying this must have been. For many years I've saved chicken bones and other parts that I would use in making stock to make rice. I love plain white rice but rice made with seasoned stock or broth takes it to a whole new level. Since I've become more aware of Asian cuisine, I've now started adding chili sauce, fresh ginger, sesame oil and chopped green onion. Oh and depending on my mood, fish sauce. It may be a bit overkill but makes for a super savory dish. So happy to see you again Andong! Love you, love your videos. XXXOOO (apparently cops every hate being recorded.)
