Just stumbled upon this channel a few days ago and have steadily been absorbing all of this "real af" content that you have been putting out that is bringing me so much value and perspective as I just embarked on my career as a line chef here in Baltimore. I just wanted to send you a big thanks for what you do. Also, like Marios said below, I just can't believe a channel as good as yours is not at 1 mil subs. glad to discover your stuff before you inevitably blow up Justin! I’m debating on getting a custom nenox too! A mirror finish 330m Japanese style steel kiritsuke with a brown jiggedhandle!!! Pricey but I have almost every color nenox already and wanting a long yanagi !

Hey. Been watching for a bit and love what your doing. I just been starting my "serious" cooking carrer. I started as a dishwasher for money but fell in love with the line lol. I been a breakfast cook and a grill cook at a rusty resturant. Anyway i work at a nicer place now and i love the experince. Anyway id love to see new cooking videos 😆

Love the videos. Couple of questions. Do you have a good source for getting leather sheaths? Also, any current thoughts on knife bags? I know you have mentioned a few in earlier videos but haven't seen anything in a while and was wondering if you have found something you like.

I tried to go and have a shopping spree at JB but unfortunately they were closed when I went on vacation. I was pissed beyond belief! I want all that swag! Must have been fun. Cool insight on how to use tools for multiple types of foods. Not just sweet or savory. Versatility is key in a efficient kitchen. Wish These types of videos would have existed when we were coming up. Graham Kerr, great chefs,Marco cooking shows, Julia, Yan, etc were cool but just seem to be a lil more of a pro insight as opposed to household. Keep up the awesome work man!

Awesome video, chef! I bought my first chef's knife from J.B Prince! It was an 8" F.Dick Chef's Knife but I'll be making the switch to Japanese knives soon. Most of the chefs at my current place use Togiharu brand knives, so that will be my first purchase. I live in CT, so any time you're in NYC, I'd love to pick your brain/grab a bite to eat. @napperoots on IG
