I always look forward to your weekend posts! This week, my takeaway is to try something new in my cooking. For me, it will be more a type of vegetable vs. herbs/spices as I’m already on board with being adventurous with them. Random question for you - what do you plan to do with that squash on the counter behind you? My go to with squash is just to roast it with a little olive oil and salt. I’m always looking for new (and simple) ways to use it.

I've not been to Italy, but to Spain and Latin America. Yes, the walking contributes to not gaining weight when I'm in Spain, even though I may not keep as strictly to plan as when I'm at home. Lack of preservatives in food likely contributes, too. But as much as I want to live that lifestyle here, even when in academia when my schedule was a little more flexible, I find it hard to eat two meals a day where you have to have a sauce simmering for an hour and a half, because I don't have a Nonna in the kitchen cooking it for me. I'm sure you've got a busy schedule to. How do you get around that? I also don't like spending my entire day on Sunday meal prepping and knowing that I'm going to be eating exactly the same thing for the next 5 days. Im bored by Wednesday, and sometimes find that instead of just eating steamed broccoli or veggie dish that takes longer, I'll skip over that portion of the meal and then I get yelled at because I'm only taking in a thousand calories a day.
