i need to say that, i wish i could do it before you go. Just don't put anything like lemon or gallic into the noodles, like Pho, hu tieu, bun rieu. Why? because those things can make the food's taste and smell change a lot, and after that, you couldn't have the best and original tatse of the food. Hi Max, 32-35 years ago, hu tieu Thanh Xuan considered 'luxury food'... not everyone had money to enjoy that bowl noodle. That place were very famous before 1975, and still very popular now. A lot of Vietnamese living oversea like to revisit this place when they are back in Saigon

Hi Max.The little tapioca ball the lady give you call “ VIÊn Ỷ”. Hủ tiếu Mỷ Tho is best to eat with soup , then the patechaux deep in the soup ( not the sauce) But .. again There is no rule , whatever way you enjoy most is your rule 😀
