I think the reason Ian threatened to chop off the stewardess' hands was because he was still so upset and angry about John Squire leaving The Stone Roses and about losing his job as the singer with his former band, he decided since Christine was a woman, she wouldn't fight back at him, so he decided to take his anger out on her. If he did think any of that, he's pretty damn sexist.
