I just want to thank you I'm 15yrs old and I'm also a Liberian Girl and u already know if u don't know how to cook in a Liberian person house they will say stuff like "You don't know how to boil water" they will continue to cuss until u know how to cook so I just want to thank you so much for taking the time out of your day to make these videos so others can cook for family, friends and loved ones. I am black American, and I love African food. My favorite is cassava leaf, acheke with fish, and potato greens. This looks very good, my sister and I have tried to make it, but I don't think we dried the greens good enough. Nonetheless, I love your cooking god bless you.

LivingLoud1974 If I can help, while every Liberian person makes it different, to answer your question, I and many other Liberians I know use stock fish and a little bit of smoke fish. Bonney fish also. Those three fishes gives it the real African/Liberian authentic taste when steaming it with the other meats. Most Liberians use stew beef, chicken thigh/breast/wing(your choice). I prefer thigh because its tender and juicy. Smoke turkey is optional but amazing in it. And I add shrimp sometimes. But many also put cow foot and pig foot. I hope this helps.
