I'm a keyboard and piano player myself! How do you go about recording drums loops for songs?

I usually prefer the TR-rec method, where you program drums using the 16 red pads. For things like hats, it is better to do them live using the keyboard for an organic feel (tiny velocity differences).

Oh it is just the method made famous by the old TR drum machines. You punch in the drums on a grid.

Are the synth just one preset or is it an organ layered with a brass sound?

There is a compressor effect that can side chain. Samples are not possible. You should check out the PDF manual and reference and tones list at Roland site. Very comprehensive docs. Note the side chain was part of a big 1.5 update.
