Y'all, I made this pie tonight, and it was so perfect. For one thing, I may never use a different piecrust recipe. Crumbly, crisp, flavorful - the perfect pie crust. The lemon curd was maybe the best I've ever made, and I humbly say that that is saying something. Everyone involved was totally involved in consuming every crumb. It's gone. Great recipe!

Everyone should also try Australian Finger Lime. The juice in the lime is packed into small orbs, so it’s basically like eating lime caviar and makes for a great topping on fish or roast veggies.

I am totally making this lemon tart. I live in Arizona a had two lemon tress and a lime in my backyard. We recently had some rare stormy weather. The larger lemon tree was so loaded with fruit, it blew over. So sad. I hated to see that beautiful fruit go to waste. I’ve baked, sauced, froze lemon slices and whole lemon, lemon zest and in first stage of making limoncello. I gave away a lot, too. Still have several dozen in the crisper. Thanks for all your lemon recipes. 😋

Love lemons. I am blessed with very productive Meyer and Eureka trees. They are in season at the same time and I am always looking for great lemon recipes. I open freeze left over lemons in slices. I freeze juice in ice cube trays for later. But I want say thank for the extra ideas. Tried the olive lemon tart, wow. I have 3 jars of Meyers in salt in the fridge, I will advise. Thanks Dan, oh and your Christmas cookie recipe was a total hit.

To squeeze the juice, yes, use tongs, but there's a better way to use them. Take half a lemon and place it, cut side facing out, between both arms of the tongs, near the middle. Hold the tong arms down on both sides off the lemon half, and squeeze down with both hands. Lots of juice. Then either rearrange the lemon half and squeeze again, or what I do is to use my wooden reamer for the last drops. This is the kindest technique if you've got arthritis... that bright yellow metal citrus squeezer hurts one's hands. Even the Oxo model does, though less. No pain when you slip it between tongs to squeeze down from both sides.

Limoncello, and I DID try to make that once. From a recipe in Sunset magazine. However, after all those months, it wasn't very good. I think my California (some Meyer, some not) lemons just weren't the right kind. The flavor was not the same as Italian lemons from Sorrento.

Do the lemons in the fridge actually ferment? If that’s true it’s fermenting at about 4degC or 49 deg F, is it just very slow fermenting (6 weeks). What are the microorganisms in the fermentation

They would ferment, just very slowly. But most preserved lemons are fermented at room temperature, no reason to keep them in the fridge as long as the solids are kept below the surface of the liquid. In terms of microorganisms, it would be mostly lactobacillus.

Citric Acid isn't the only substitute when you don't have access to lemons or limes. In a pinch I use True Lemon and True Lime. Both come in shakers or packets.

Dan! My mind is blown with this recipe. I bake and cook a lot (former restaurant owner) and it never occurred to me that you could swap butter for oil. So a Very Important Question for you. Is there a reason it has to be extra virgin olive oil? May I please use regular ol' oil?

Lemons are also hybrids, they've just been around for a while. All citrus are made from some ratio of Pomelo, Citron, and Mandarin.

Dan I had a friend who's just getting into baking ask me this evening how she could improve her scones and also cut back on the sugar and butter. It came to light she was more disappointed that the lemon she had added hadn't shone through and also the texture was off. The framing of the question reminded me of your video and comments about dairy muting lemon, so I checked both here and the olive oil video and found you'd said that "dairy compounds in butter... bind to the flavor compounds in lemon". Could you elaborate on this chemistry? Can we extrapolate this to the scone? Is there a non-dairy butter sub (idk margerine, coconut oil) that will give us both the desired flavor and texture?

I bought a new car (Hybrid) and it was declared a “Lemon” because the hybrid system failed twice, once after I took it back to the dealer and had it repaired. I got all of my money back and the manufacturer gave me a cash bonus for my inconvenience. I guess they didn’t want any bad blood. So in this case, the Lemon was turned into Lemonade. :)
