RECIPE AND INGREDIENTS:
6 potatoes.
Salt.
2 eggs.
Salt. Black pepper.
Italian herbs.
Dried garlic.
Mix well.
Olive oil.
Pour the eggs on top.
Green onions.
Cover with a lid and cook over low heat for 10 minutes.
Parmesan cheese.
Parsley.
Cook for another 6-10 minutes over low heat, uncovered, to keep the potatoes on top crispy.
That's all!
For the sauce:
Mayonnaise 2 teaspoons.
Greek yogurt/sour cream 2 teaspoons.
1 cucumber.
2 garlic.
Mix well.
Salt. Black pepper.

I have another way to make it I've been doing for many years. Shredded potato or Yam and olive oil in cast iron, chopped onion, or what you want and cook till brown on stove top, stir up eggs the way you want them, pour over top, and put spinach leafs on top..whatever you want, then sliced mushrooms, and smooth with choice of cheese. Have oven set at 425 before hand then put cast iron in oven on middle level...no lid and wait 10 mininutes till bubbling the hit with broil setting, keep eye on it till top is browned to where you like mmmmmm sooo good.
