Why magic?) and you try it😉
📝Kharcho:
Water - 3 liters
Beef on the bone-0.7-1 kg (you can use any meat)
Rice "Krasnodar" - 1.5 tablespoons per 1 liter of water
Onion - 2 pieces
Butter - 30 grams
Tomatoes cut in their own juice - 1 jar (it is better, of course, to use ripe tomatoes, but they are not yet available)
Adjika - 2 teaspoons (I recommend to try smoked adjika)
Tkemali - 4 tablespoons (I used tkemali of my own making, the recipe is on the channel)
Walnuts - 100 grams
Herbs: coriander, parsley, garlic, red capsicum.
Spices: suneli hops, coriander, bay leaf.
🍵For broth:
Onion and carrot 1 piece each
🍲 Put the meat in a container. Peel the onion and carrot, fry in a dry frying pan for 5-7 minutes and add to the meat. Fill with water. Bring to a boil, remove the foam and cook for 1-1.5 hours.
🍲At this time, we prepare the roast. Chop the onion and fry in butter until transparent (about 5-8 minutes). Add the chopped tomatoes, adzhika, tkemali and mix well. Leave to languish on medium heat for 5-10 minutes. At this time, the walnuts are heated in a dry frying pan and crushed. You can kill it in a blender, but I like it when the nuts are felt, so I chop them with a knife. Add to the roast.
When the meat is cooked, remove everything from the broth and filter it. We separate the meat from the bone. In the broth, pour the washed rice, cut meat, lavrushka, red pepper pod and cook for 10 minutes. When the rice is almost ready, add the roast and simmer all together for another 10 minutes. Finely chop the greens, crush the garlic and fall asleep in the kharcho. Check for salt. Add spices.
⚠ ️When using adjika, before adding spices, try kharcho!!! Perhaps the Spices will be enough as it is ⚠ ️
🍲Bring the kharcho to a boil and leave for 10-15 minutes. Have a nice day ❤️
It goes well with chacha, vodka)
Tortillas for soups:
Live yeast - 25 grams (can be replaced with 1 pack of dry, 10g)
Kefir - 1 cup (I have 300 milliliters)
Flour-3.5-4 cups
egg - 1 piece
Olive oil - 1 tablespoon
Salt, sugar-1 teaspoon each
Sesame seeds - a pinch per tortilla.
Put the yeast in a container, add salt, sugar, olive oil, warm kefir, beat in the egg and mix. Add 1 cup of flour, mix well with a whisk. Gradually introduce the remaining flour. The dough should stop sticking to your hands. The finished dough is greased with oil and put in a warm place for 1 hour. As the dough is suitable, moisten your hands with vegetable oil and roll the dough. Cut the dough and form 3-4 balls. Put them on a baking sheet greased with vegetable oil and form tortillas. Brush with beaten egg and sprinkle with sesame seeds. Bake for 20-25 minutes at 200 degrees. Have a nice)
