The sugar is for the excess moisture in the meat. It helps to thicken the sauce instead of it boiling the meat.

What so good about this sugar loaded beef??? 🎉(. Cause teeth cavity and lots health issues and worst of all cause bad skin)No ventilation in the room. In long run, the walls would be full of grease.

To all of you that are bothered about the raw egg. Eating raw eggs is a very common thing in japan and there food quality is very high standard so it is completely safe.

I so want to go to Japan to dine on their wonderful cuisine. The Japanese style of cooking is amazing and entertaining all at once. And that beef! We in the States got nothing on the Wagyu!
Each person's happiness in eating is not the same. Some people recognize with the tongue. Some people recognize with the eyes.

Adding sweetness to a dish is often done to add depth to the flavor. For example, curry is often added with honey or apples. In the same way, sugar is added to sukiyaki, but it doesn't taste sweet at all.

So what Aden is telling me is that most Sukiyaki places in Japan not only have a great ambience (as I would not be able to make judgment on taste or smell despite the fact that I'm pretty sure if Aden filmed it I would eat it, like it, love it, be it), it would be the freshest beef..... I'm sold.

I would like to visit once Kanaya, a famous restaurant for Iga beef sukiyaki. It looks delicious just by looking at it.

Ate this dish a couple of times very long ago at a good japanese restaurant in Sao Paulo. Also had Shabu-shabu, likewise. Shabu-shabu is similar, but whereas sukiyaki is considered sweeter, shabu-shabu is more savory. Shabu-shabu meat is even more thinly sliced and the individual slices of meat are cooked by dipping into simmering liquid at the table, while sukiyaki is cooked in a more casserole style.

That is my fantasy to live someplace that is so clean, it speaks volumes about a culture either how dirty they are, or how clean they are. I have so much respect for the Japanese.
So many people in the US are just simply ignorant. They see raw eggs and immediately freak out. This is what I think is absolutely the worst trait for Americans. We are straight out paranoid. if you still don't believe me, ask us about guns. I have been having raw eggs with hot pot or sukiyaki like this one since the 80s here in the US and I'm doing just fine. I guess these people never had beef tartare either. They have no idea how tasty that Kobe or Iga beef is when mixed with eggs. It is absolutely delicious.
