The 9 days isn't just the fermentation but maturation included for you to get that green beer taste, talking about the foam, 1. It could be because of the rate at which the beer is being served from the tap. Don't forget we have the keg beer which is served from kegs, they don't foam cos the flow rate is controlled from the tap. Also you don't pour beer through the centre of a cup rather you pour through the edge of the cup that also reduces the foaming
