I've come back with Somali rice! You guys really loved this one during my Instagram Live cooking sessions a while back so it had to make it to KZbin! Tbh Don’t think I had a choice 😝 It really is an underdog in comparison to rice from other cultures and I love my Mum and sister for showing me that it literally takes 15 mins! Gosh I love it! Hope you enjoyed it too!
What I used:
1 cup rice (I like to use sella rice), parboiled (Cook until it is half cooked, so half the rice is clear and some is still white, for me it takes about 8 mins. This can differ)
1/2 onion, sliced (you can choose to use a whole one)
1/2 cup vegetable oil (about 8tbsp)
1 onion, diced
1 medium tomato, diced
Handful coriander, crushed
3-4 garlic cloves, crushed
1 chicken stock cube (I used Maggi brand, you can use 1 tbsp of the powdered version, you can substitute this for vegetable stock)
4-5 cardamom pods, (you can also use 1/4 teaspoon powdered cardamom)
1 cinnamon stick
1 tbsp ground cumin
1/4 tsp food colouring of your choice (turning it into a liquid or using the liquid versions work too)
1/4 cup raisins/sultanas, rinse in boiling water to soften

Thank you Ebada. @Falis I don’t think a person needs to be a man to not understand how to cook rice. Simple rice can be daunting let alone Somali rice we saw our parents make which had plenty of steps to them which often put many of us off. Also what’s difficult for one person can be easy for another and vice versa. Also there are plenty of men who excel at cooking rice ☺️

I’m a Mexican-American Muslim. This reminds me of Yemeni rice sisters bring to the masjid 😋 which of course I just HAD to learn how to make since it’s so good. Now it’s a pretty regular staple dish at our home. Unfortunately, we don’t have many Somalis in our area, but I do notice Somali & Yemeni cooking have things in common, from the hawaijj spice mix, to the fried onions and food coloring you add to your rice. Hope one day I get to try authentic Somali food 😊

Okay so I have cooked this recipe several times, and would like to help others with rice cooking part so their basmati rice can come out fluffy and separated. For a cup of rice soak it for 30 minutes in warm water, then for the actual pot of cooking water pour some oil and squeeze some lemon juice (i did not measure the water, just more than the rice- measurement of the water does not matter and I believe it may not matter for the rice either), then let that pot of water boil to high heat , then put your drained soaked rice in the pot and let that boil on high heat for 4 minutes. After you have boiled the rice on high heat for 4 minutes drain the rice again. Then put the rice back in the pot and let it cook in its own heat for 15 minutes (stove off). While that is doing that you can make the spice mix. And then you can place your rice on top, letting it further cook on the stove until you see fit. Boiling the rice on high heat for precisely 4 minutes with the lemon juice and oil is key! Prior to learning that, I could never get the rice fluffy and separated. I tried cooking it until “translucent”, and “al dente,” but my rice would never be the right texture when I was finished with the whole recipe.

There are so many types of rice it drives me crazy. It would not work for me if you use regular basmati, but it did work for me when I used Sella basmati. I'm glad she mentioned what kind of rice she used, I hate recipes that only say rice when it's some kind of special rice. It does make a difference.

Made this dish so many times, I steam some well-seasoned chicken(salt, garlic powder, paprika, cayenne, cumin powder, ...) a little bit so it releases its juices and I can get a bit of stock then I fry the chicken and use the oil from frying the chicken and the stock to cook the rice. I don't need Maggi after this. Maggi is overprocessed and contains gluten so if you're cooking for someone with food sensitivities this is a great addition. This is a great and easy to remember recipe. Thank you Ilhan!

This loooks so good. My friend in college was somalian and that's when I first tried the rice and fell in love. I feel so connected to the culture 💛 is there any way I can make this alkaline vegan for a healthier alternative? That would be an answered prayer as Im switching to a healthy life style.

I saved this video. It looks Interesting and favorful. Not sure my west African palate will like the raisin, cinnamon addition to rice but I will try it one day.
@IlhanA

Hey, I would certainly suggest putting the raisin to a side of the rice to start with. Growing up I didn’t like raisins in my rice and now I can’t be without! Cinnamon adds flavour but not like you would assume and you can always throw the stick out. But rest assured your West African palate will enjoy this sooo much! It’s honestly the best 😆
