Questions: 1) is cake just pulled out of refrigerator when you apply the fondant and 2) why after applying the fondant on the cake do you use the smoother and go around and around on the cake so much? What is the benefit/purpose of doing that? Thanks Beautiful work as usual. You’re so talented

It’s too push any air pockets out and to make sure that there are no gaps that could cause swelling of the fondant.
