There is a powder call butterfly pea powder that can give out natural blue and edible colors to food. It’s made out of flower, so to clear it taste like tea but If the base of the product is white or colorless the powder would dye it blue

Butterfly pea is a good natural blue color, but it is not really stable color in long term, so it will fade. I think dragon fruit does the same, so that may be why it was different color every time
