Because the body is not prepared. Remember, this whole process takes some time to complete in order to make the antibodies in order to defeat the pathogen. So by vaccinating for flu, for example, there is a little bit of that pathogen in the vaccination to help your body produce antibodies in order to defeat it next time and already know how it looks like in order to make the specific antibody to defeat it.
