PGA, or Propylene Glycol Alginate, can be used to improve the stability of beer foam. It is derived from kelp.
Use 4 to 8g per HL (40 to 80ppm) with a maximum of 100ppm.
Mix with 30 to 40*C water at a rate of 20g PGA per liter of water.
Mix at high shear force (blender works well) for 30 to 60 minutes
Filter the mixture, and add the thick liquid to the beer, after all other fining is done, as well as filtration.
Avoid any shear force after PGA is blended in beer, to prevent it from gumming up and creating haze.
