just pronounce "u" (french way) and "i" together very fast, and you naturally get /ɥi/.That's how I alway did as a native French. I don't understand why they had to invent /ɥ/

That's exactly what /ɥ/ is. The symbol is different from /y/ to indicate that it's a short glide and not the primary vowel. Additionally, it is not always followed by /i/, and can be used in some cases before /a/ and /e/ or /ɛ/.
