Do not use food processor - there is special potato grater from Lithuania that does a grate job (hehe!) If you aren't going to get specialized potato grater, hand grate. It will make a world of difference.

Yes, use the fine grater and not the food processor. The food processor grates the potatoes like for hash browns. The fine grater comes out with a much better texture (like pudding) and it tastes better too. Maybe the oxidation of the potato makes the better taste. I made it with the food processor and learned my lesson. Like you said "It will make a world of difference".

You can grate the potatoes by hand, see if you like Kugallis first 😀.

I'm sure each family makes the recipe a little differently, but maybe the "grating" of potatoes was lost in translation. The potatoes are more like a mush, not shredded like hash browns. Before I was bequeathed Nana's Lithuanian food processor, we would use a hand grater that resembled a tennis racket. That will give the correct consistency. Or, if the racket graters are no longer made/available, use your box grater side with the teeny tiny holes (where the metal was punctured facing outward, rough sided). Good luck!

I loved the racquet graters but they deteriorated and small shards of the grater fell into the mixture....

My dad was 2nd generation Lithuanian. He would've argued with the shredded potatoes. He always used a grater that created tiny square chunks of the potato. I've tried shreds & found the dish too dry. He also grated the onion & used slab bacon & pork loin chops. I don't know if this was a family variation. Dad passed in 2003 so I only have my memories. The recipe has been misplaced over the years. I would have to try yours. Dad always made two 9x13 pyrex dishes for our family of 5 for two weekend dinners.

The potatoes need to be hand grated for the correct texture. They make a machine in Europe that will grate them properly. There is no substitute for hand grating this recipe.

Hand grating makes Kugelis taste sooooooo much better. I don't care about the potatoes turning color.

My family says it totally different. Kug/like “lug” ga-lee. I dont cook the onions beforehand. I cook the bacon in the oven. The key???? Pouring in all the bacon grease in too. Fat is FLAVOR!!!! I also use WAY more eggs. Funny how we all do it different. And I do WHITE pepper. I usually do mine in my kitchenaid mixer attachment, but I have a food processor now…. Hmmmm! No cheese cloth?????? I also add strips of bacon on top

I’ve never had Kugelis with shredded potatoes before; my family always used a food grinder - very tedious.

You should really specify salted or unsalted butter in this recipe, from my experience it can make or break a batch of kugelis! I personally use unsalted and the proportions seem similar.

Potatoes don't turn brown if you don't let them sit out for an extended period, i.e. over an hour. Grate the potatoes then cook them. Also you can use diced sausage instead of, or in addition to, the bacon.
