This Greek inspired sandwich is a must try. We all know that the protein is the highlight of this sandwich, so here is how to make it count. We use lamb let and gave it a simple marinade. Simply cut your lamb into bite size pieces. Lamb has a lot of silver skin, be sure to remove all of it. Then marinate with salt, paprika, cumin, and coriander. Let this sit at least 1 hour. We let our lamb sit overnight in the marinade. This helps the salt and the spices to melt onto the lamb. When you are ready to grill, skewer the lamb. On medium low heat, grill the kebabs. Once the lamb is done to your desired doneness, remove the lamb from grill. Warm up some pita bread. Using this pita, pull the meat off the skewer. Add some tzatziki, and your favorite veggies. We added lettuce, red onion, and cucumbers. Tomatoes also pair well with this sandwich as well as some feta. It’s super customizable but we kept it simple and let the lamb do the talking.
