Incredible Moist Easy Simple and Delicious Buttermilk Cake

Ingredients:
1 egg
2/3 cup(150g) sugar
vanilla
7TBsp (100g) melted butter
3/4 cup(200ml) buttermilk (kefir)
1tsp baking soda
2 cups (300g) flour
For soaking the cake:
1/3 cup(75ml) hot water
2TBsp dolce de leche or condensed milk
Cream:
1 cup (250g) sour cream
2TBsp condensed milk or powder sugar

I had so much leftover buttermilk so I researched KZbin video for a recipe. Stumbled into this and gave it a go eventho there's a comment below that said it's rubbish. Made it today and as a home Baker with years of experience, I have to say this recipe is EXCELLENT 👍 Top Marks! I followed it; just did a little tweaks. My egg was smaller so I used 2 instead of 1. I added half lemon juice n all the zest in the buttermilk on top of the bicarbonate soda, plus poppy seeds in the dough itself. Once the dough is all combined, if it's too thick you can add a bit more buttermilk to loosen it up like I did. As soon as it's Baked while it's hot I pour extra lemon zest mixed with granulated sugar. It was divine!! So soft, moist and zingy. Buttermilk lemon poppyseed cake. All my mates loved it! Definitely a keeper!! Thank you for the wonderful recipe 😘 greetings from England

Hi, so would the taste of the cake taste different with the condensed milk instead of the dolce de leche?

It's going to be a different consistency and you will have to add less or more flour😉 and will be a different taste)

I just made the cake now. The cake turned out very dry and hard, definitely not moist and fluffy. Already followed all the steps :-(

That's really strange 🤔 Because it's really yummy cake and not dry😳 Are you sure you did everything right?

I haven't tried this recipe yet, but from my experience with baking, sometimes the time of baking will differ based on the size of the pan you use. I usually bake for 30 minutes first and check if the cake is baked before baking for more time. Over-baking can happen if the cake tin is of a different size, resulting in a dry cake. IT can also happen depending baking settings if it's a microwave. Also if the baking soda is excess or flour is excess (when measuring, don't press down the flour in the cup) If the place you live in has a colder and dryer climate, oil would work better than butter I guess. At least that is what has happened with me. But the best alternative I have found is to steam the cake instead of using an oven. I cover the cake tin with a foil and place it on a stand/ double stand in a bigger vessel with water. (the vessel does not get burnt when using water, but sand and salt can ruin the vessel). Cover the vessel and let the cake steam. Check and add water in between. I hope this helps :)

This recipe calls for melted butter which will mess up the rise. As you can see from the slice of cake at the end of the video the cake is dense with few big holes not many small holes. Never melt butter when making cake. Soften butter and mix into sugar to make a paste mixture. Melted butter is not the same as softened butter

You ruined the cake with melted butter, which is why the end product is dense with big hole instead of many tiny holes. Fix would be mixing softened butter into the sugar, not melted. Melted butter is not the same as softened butter.
