If you what that fluffiness without the hassle try the following; separate the egg whites and yolks, beat the egg whites till soft peaks, beat the yolks with a fork till mixed then fold the yolks back into the whites for velvet style omelette. You’ll thank me later.

Admire his way of cooking. Have not seen any street vendor cooking with such elegance and hygiene in long time. Wish him good luck. Will suggest him to add 1 teaspoon of cornflour in his blend to retain it's fluffy-ness after cooking. Also a non stick pan will let him cook with less greasing. I have been making this omlette for a long time....I mix shredded cottage cheese in it as my flavor ingredient and name it Fluffy Egg Cheesy Pillow. Well I use 2-3 eggs per serving....sometimes when cheese is out I add a cup of double toned milk...it reduces the fluffiness but turns into a pizza thingy.

I never thought that omelettes can be made so fluffy. I was nearly shocked after watching this video. I thought that the man is cooking a pancake but he wasn't. It looks tasty hope its taste good too.

Simple, Nice and fluffy omelet!! He doesn't rush to make it like a street food👍. .. and thats also half the recipe for a cake (without the flour, vanilla and sugar..and ofcourse the oven 🙂)!

Honestly, I know how great that texture tastes. If someone can reach out to him, a piece of cooking advice - don't turn the omlette upside down, else the fluffy sponge texture is gone. Cover it with lid so it will cook both ways.. and then just fold it lightly and toast the sides in butter. I have done it at home and it has a really good mouth feel.
