A huge portion of people in south and southeast Asia live on less than $100/year. Even if some could afford shoes, which many cannot, they wouldn’t because it is culturally acceptable in many places. You should get out and experience the world…

While India is mostly a tropical climate, and it gets hotter than hell and 3×s as humid that's still no excuse not to be wearing shoes. At least canvas shoes. And yes they should be wearing surgical or plastic gloves while handling food. Also, the cooking area needs a thorough scrub down with bleach to clean and disinfect. An American Health Inspector would close these people down in a heartbeat. Oh, one other thing...how do they keep mice and rats out of their supplies and food?
