Well, I do not know any decent book about olympic geometry, as it is not my cup of tea. Talking about number theory, I can recommend a few a few. First, I highly recommend 𝐶𝑜𝑛𝑐𝑟𝑒𝑡𝑒 𝑀𝑎𝑡ℎ𝑒𝑚𝑎𝑡𝑖𝑐𝑠 textbook, it has many interesting problems and many useful methods of dealing with sums and recursions are covered. Secondly, 𝑇ℎ𝑒 𝐼𝑀𝑂 𝐶𝑜𝑚𝑝𝑒𝑛𝑑𝑖𝑢𝑚 is invaluable, as it lists many useful facts at the beginning and goes through actual problem from the International Mathematical Olympiad. Next, 1001 𝑃𝑟𝑜𝑏𝑙𝑒𝑚𝑠 𝑖𝑛 𝐶𝑙𝑎𝑠𝑠𝑖𝑐𝑎𝑙 𝑁𝑢𝑚𝑏𝑒𝑟 𝑇ℎ𝑒𝑜𝑟𝑦 is a nice problem book. Finally, 𝑃𝑢𝑡𝑛𝑎𝑚 𝑎𝑛𝑑 𝐵𝑒𝑦𝑜𝑛𝑑 is also a really good book.
