Most people don't know that the Indian adaptation of Chinese fried rice is actually unbelievable. The rice is literally so flavourful on its own that you dont need anything to go with it. No extra curry or seasoning required at all. Something that people visiting India should certainly try on the streets (NOT AT A RESTAURANT, that fried rice is very different). We call it Indian Chinese ;)

For the peple complaining for gloves let me tell something If someone is wearing gloves, it is enough to fool the people and cook with them as gloves are supposed to be changed at regular intervals in a day but bare hands are much better choice in cases like these coz bare hands can be washed regularly so the hands are cleaner than gloves

My observation : Most important ingredient for that street style flavour is That "Lohe ki kadai" (wok) The veggies get their smoky flavour due to high flame roasting And its possible only in this type of Wok as it gets very hot very quick and heat passes easily thru it Incase of heavy bottom cauldrons/kadhai Heat doesn't passes that easily and you wont be able to roast veggies that good
