Dear Sanjay, even though your videos at the beginning were also great you just become better and better. I just love the way you teach and I think it's a good new idea to present the spices and ingredients for a short time so that we can see what you really put into the dish ("just a liiiittle of sugar..." while you pour an entire cup :D)!

Hello Sanjay, I am a young chef newly started to run an Indian food catering business. I got to say that you are extremely talented and there's much I have been learning from you as well as getting re inspired . Regards to this recipe, having any big curry order within upcoming days, would freezing or refrigerating this gravy compromise it's taste and if so how long can it be stored in the fridge/freezer for? Secondly, cooking meat (mutton /lamb) into this pre-made gravy, would it cause it to be over-cooked or is it ok for me to just add boiling water into the overall meat+gravy content until the final curry is made (I.e. meat is cooked and tender). Pooja Shah It does but you will not have that creamy texture in the gravy so either one should be a good option. Refrigerate for few days.

i tried this but my gravy turned brown/red not yellow like you shown. what did i do wrong ? i did exactly you showed. the onion paste came out brown for me not white as you shown. Great recipe anyway.

Does one HAVE to put tomatoes/tomato paste or can one skip it??? As a person with kidney failure, the potassium in tomatoes is like poison for me!!!

I think it needs something with a bit of a fruity flavour in there. If you can eat tamarind pulp, that might work, but it's more sour than tomato so perhaps use less? It is well worth making.
