I have done the egg yolk powder and my bread came out dryer. I have always used the fresh egg yolks that come off of the egg whites that I crack myself. I use one cup of liquid egg whites and 1/3 cup of egg, white powder, and I have wonderful bread. it’s just a variation. If people don’t have a lot of the powder or have eggs they want to use up other than that this is exactly the recipe I used with the few variations like powdered, buttermilk

I would LOVE to know where you got the container for your Egg Protein. That lock & lock size is perfect! I am so glad you're redoing this recipe. I'm making these this week. One thing about egg white bread is that it does not restart cravings. Also, adding variation to meals helps others see eating very low carb is easy.
