But you have to take care not to leave it alone with oil in a pan or something because it can reach the temps of oil catching fire in 3 or 4 minutes so when using induction hover around it

Yes, there is, you can't really simmer on induction. It has only two stages On and Off, which means that it turns on and off every second in attempt to keep the steady temperature. Which will result in your liquid going into boil and stop, go into boil and stop etc.

@@5T3F4N_I not really. There is a reason why there are power levels from 1-9. 1-2 or even 3 are good levels for simmering on induction cooktops. I know because I own and use one.

@@5T3F4N_I that's what a lot of ceramic hobs do too. Our ceramic hob just turns on/off all the time when set to anything lower than max.

Actually, he put the 50 note on induction cooktop and it will never burn due to the technology used by the induction cooktop. With induction technology, the cooking pot itself becomes the generator of heat. An electric current is sent to coils beneath the glass cooktop, thus generating an oscillating magnetic field that induces small electric currents in the pan. Much of this energy is then converted into heat. So, burner itself doesn't produce any heat that can burn the 50 note

I feel Ceramic Hobs allow more control (same as in a conventional gas cooktop) than induction hobs

The opposite is true. When induction is on full heat and you turn the heat down or switch it off it is immediate, with ceramic on full heat and you turn it down or off, it takes a long time to cool down.
