Think about what you've done, Kathy. That cookbook isn't from America. I live in America. We have some pretty chill stuff. That cookbook was conceived on the beaches of the lake of fire. It should've been left where it was birthed. What have you done, Kathy? What has the human race done to deserve this? Go back from whence you came, Kathy! Go back! Growing up in Dallas, my family used to make something very close to her Chicken Nacho Casserole for lunch almost every Sunday. We just added a can of cream of chicken soup & half a can of enchilada sauce as well before putting it in the oven. The tortillas absorb the moisture from the soup and the sauce and become all gooey. We'd have it with a side of refried beans. I love the hell out of that stuff. But without the soup and sauce, I can imagine it'd be pretty boring.

That sounds more of a meal than this was. The recipe in the book was more for an appetizer/snack than meal and looked bone dry. I might actually make that (your's, not the book's) for dinner sometime. While unhealthy and artery clogging, it sounds tasty.

Don't bother to layer if you do. We put the tortilla chips on bottom, then just poured the soup, canned chicken (with juice) enchilada sauce on top of them, stirred, then layered the cheese on top. As it baked, we'd open up the oven and stir in the cheese. My wife doesn't like the soggy-tortilla aspect of it, so next time I try it, I'll make it w/o the chips in the baking pan, but instead serve it in a corn tortilla, as sort of a gringo-enchilada.

That's what we called them in my household, but really, my sense has always been that a proper enchilada is that it's made from a rolled, filled tortilla, not a pile of tortilla chips. So I started calling them chicken enchilada casserole, which seems more accurate.

This book is so sad looking on the inside. All the text is at the top of the page, in a bland font, without colours, or pictures, leaving the bottom of the page blank... It just looks like printed pages. I mean of course it's printed but I mean printed pages you would see in report for a company, not a cook book. Casseroles sort of follow a similar theory to shepherd's pie. Casseroles just have more varieties of filling. They were HUGELY popular in the US during the 50's and 60's. But yeah.... the chicken thing wasn't a casserole. Casseroles need to have a creamy base.

You know, that first one? I think I know a way to change it. Skip the chips and the pepper-jack cheese and just go for a Mexican Blend (I'm allergic to pepper and don't like being dead.) Add some ground hamburger with taco seasoning, and then you take some of those canned biscuits, you know, the ones in the twisty can you twist and shriek each time you open them even though you're expecting it? Well, line the bottom of an over dish with the biscuits, then layer the stuff on top and bake it until it's done. That might be good.

Hmmm just thought of something, you might be able to turn it into a dinner. Start with raw ingredients, just add some tomatoes/salsa, and a few more veggies. Swap the chips out for rice, and cook it all together, rather than just warming it up. THEN top with crunchy tortilla chips and have sour cream. I'd eat that =P

So I've been looking through cheese ball recipes, and not one I've seen with canned tomatoes/tomatoes unless they're a dip. From what I can tell, wet ingredients added are mostly fats or very little liquid, probably because fat holds its shape better when chilled. What might have savaged this was to wrap it plastic wrap and squeeze all the air out so it compresses into a more solid cheeseball. Nothing can save it from looking like barf tho lol.

Love your videos. If you ever want to try the cheese ball again (probably not given your reaction), use double Gloucester or Red Leicester. When American recipes refer to cheddar, we usually mean one of those. White cheddar is an unusual thing to us. It won't make the cheese ball any better, but since you went through the trouble of getting Rotel, I figured it worth mentioning (where do you get it by the way, I live in Cardiff and have had a bad craving for Rotel and melted cheese dip). :)

...and maybe there should be instructions on how to drain the tomatoes. It is part of the preparation process. This is a cook book for lazy assholes without a lot of time on their hands to make proper meals, nor the skills to do so. So of course it needs to explain basic concepts like that. Can you honestly say that 90% of readers wouldn't fall for the same trap? If they do fall for this, then it was a poor cooking instruction. At least at the level of 'cooking for dummiez'. If you cannot correctly communicate what is supposed to be done, then it is a poor instruction.

+Lemeres Her book isn't a cooking for dummies book. I won't defend it as good, cause its not, but I do think people are mistaking what it is. Look at her, she's an old school Betty Crocker style cook, that's why the recipes are so bland. Her version of a dummy cook is someone who can't be bothered with a bordelaise sauce on the Sunday roast, and just discovered canned gravy. She assumes that every wife using her book has a basic knowledge of cooking, and they're just looking for some short cuts. However it's marketed, that's the mindset she wrote it in. Does it make it a more acceptable cook book, not really, cause they're still crappy versions of already outdated recipes.

tor - TEE - yah. This video is hysterical. Too bad I found it after I purchased the Dump Cake books (yes, all three of them) after watching the infomercials. Oh well, at least I'll know who has sympathy for me when the recipes go horribly wrong. Plus, I think I'll put tape over Cathy's photos on the fronts of the books. You've given me nightmares that she'll sneak out and steal my soul.

I love that it makes a big deal about no extra prepping or precooking, but it has recipies that require precooked chicken.

Are you going to do a Dump Dinners contest like last time? Because I would love to join in on that! Also, The reason the Taco Cheese Ball was soggy was because you used the wrong cream cheese and cheddar, as well as, not draining the tomatoes enough. Another thing is that Nachos are usually layered: Tortilla Chips, Cheese, Chicken (or whichever meat you want), and repeatedly layered until you're out of ingredients, after that, the green onions go on top and are baked with the rest of the nachos until the cheese has melted. People sometimes season the meat when they cook it for nachos. The way you did it is fine, I guess, but it just irked me a bit. Sorry for the long post. Great video though!

Looks like a cookbook for the hopelessly single, diabetic and generally uncreative on the culinary level. I can have a steak-and-veggies meal done in twenty minutes. If you don't have that much time in your life and need some excuse to throw anything into a cooking pan and set it to Broil - I don't know what to tell you. Plus, I'm kind of reminded of how some of my American friends consider decent cuisine to involve copious amounts of cheese, bacon and nacho shards... Ever heard of "porcupine balls"? It's basically a whole day's worth of sodium and dairy intake in a single meal. Unbalanced much?

Yes, a cheese ball like that is a real thing. I'd have drained the tomatoes, and Pat them dry with a paper towel, and sprinkled the chips instead of rolled it. Still wouldn't have been great, I prefer a good homemade queso, or layered dip. Heres the thing about Cathy. Her recipes haven't made it out of the 50's . These are "easy" versions of bland Betty Crocker dinners. You know, back when they only boiled chicken, and oregano was considered exotic. I make "dump" style casseroles all the time. Usually I just make them up with what's in the freezer lol, BUT if I were to get inspiration from this tortilla chip casserole, I'd add calabacitas (mexican style squash), a can of tomatoes, seasoning, and red chili sauce. In New Mexico you can find really great frozen red chili in every grocery store, but everywhere else I'd probably just use canned enchilada sauce. THAT would make it a dinner.

Hate to tell you this, but as a Low Middle Class American in the South, I've had several casseroles like this. It mixes the American casserole with more Texmex ingredients.

oh my god, my mom told me about how my grandma would make those "porcupine meatballs". it's just regular meatballs but with rice in it, making it bristly. that's depression era cooking right there

Over here in the states, the pepper jack is white and the cheddar is yellow. (Mostly. Vermont excepted on the cheddar)
