My gut says Mittens is tuned to leverage weak pieces for more advantage rather than taking them, which is a tactic that Bots don't use often. That's why it sits there forking pieces without taking until you make a decision about which one you value more, and uses that time to shore up other parts of the board. It's a weirdly psychological choice that will probably get slapped by Stockfish. Edit: like a cat playing with its food

That's most likely because she's more focused on torturing her opponents as opposed to making the best moves possible. She wants to put you into a position where your only choices are to die, and that's hard to do with Stockfish. Her purrsonality (I am ashamed of myself) just bleeds into her play style too much.

I did this too. And Stockfish 15 destroyed Mittens in 22 moves! Stockfish sacrificed material like there is no tomorrow and after the move 18 there was an inevitable mate with Stockfish lacking 8 points of material. Absolutely beautiful and absolutely crazy game.
