Fish sauce and coconut palm sugar. Thai food is all about mixing different tastes in one dish. A combo of salt spice sweet and sour. Arroy jing jing (very delicious)

It is worth noting that the worms you ate are not the same worm that we used as a bait for fishing where it can be found pretty much anywhere. Those worms they fried are mostly known as bamboo worm which is basically a larvae.
