1. Yes security updates if any have to be installed manually. 2. Unlocking bootloader possesses certain risks but it is still safe to have banking apps installed. 3. Yes gpay and other apps work. Some apps might need to be hidden in Magisk if using Magisk for root access or installing certain modules.

Unlocking the bootloader is mandatory for flashing custom ROMs, rooting the device or installing custom recovery. Only after unlocking the bootloader we can bypass device restrictions to install custom firmware.

Once unlocked its very risky to relock and unlock again on motorola devices so can't risk that. But it is simple to unlock, you can go to motorola's website - sign in - and follow the instructions. :)
