Love acini de Pepe!! I grew up eating it in my grandmothers homemade Italian chicken noodle soup! The little noodles just make it one of a kind! Its simple recipe with pretty much all the same stuff you used for this, except use chicken & chicken broth and no tomatoes, and add some Italian seasoning. I’m definitely trying your recipe out & soon! I know my family will love it.

Mirepoix is not equal parts, it's two parts onions, one part carrots, and one part celery.

Thanks for the clarification. But I've definitely read it both ways. Ill make sure to just call it "carrots, celery, and onions" next time. 🥴

This is only my 2nd video of your cooking that I've watched. Question: Why not pre-cook your pasta while the Instant pot is cooking and add it in when you finish cooking? This would reduce your cook time and eliminate the "Open, Add, Close & Then Wait to Re-pressurize of the Instant Pot" portion of your cooking. You could even reduce your "Cooking Time" and let the Instant Pot release the pressure without venting?

You could absolutely do that if you wish! I just made it this way cuz... one pot = less dishes. As for the repressureization it only takes about a minute since the contents of the IP are already at a rolling boil. But you are indeed correct. Thanks for watching!
