Let the milk cool as slowly as possible...dont' do the waterbath. The casein and fat molecules need time to form the precursors of the yoghurt gel matrix that the bacteria uses. If you waterbath the milk, you will end up with thin and or split yoghurt. That's why your yoghurt dropped all that whey. You lost over half the weight of yoghurt to whey because it split.

While cooling your milk on counter or water bath, you can place a dinner plate over the top to help prevent the skin from forming on top as well as dust or flying pests from gaining access.

Hey, so mines did the 3 beeps too but it still said boiling instead of yogurt. Also after you did the water bath and you had it back in the instant pot during the 4 hours of cool down period, did you just set a timer on the instant pot or did you hit the yogurt function again? When you came back in from the water bath everything was alrdy going so I wasn’t sure if you did something else. Thx!

Looks Delicious!! Little easy hack. Flour the beef cubes 1st and put them in the crockpot. Gravy is made. Better yet season the beef and season flour
