I made this using a commenters suggestion of 2 cups of stock and 2 cups of cream for 500gms of Pasta & got the burn notice. I left it for 6Mins and then did a quick release, it was all cooked and perfectly fine. I gave it a mix with the cheese, scraping the bottom and it was delicious.

I've been watching your videos and cooking your recipes for quite a while now. A few weeks ago, when my wife and I couldn't find anything to watch on TV, I convinced her to watch one of your videos. Now when I ask her what she wants to watch, she says " Let's see what Sam is cooking". Take that as a huge compliment, my friend, because she gets bored very easily. Made it! Fantastic! Used Bucatini pasta though. Prepared in Ninja Foodi. The chicken breast was a little chewy, so I'll brine a few hours next time. Used the same pecorino and truffle. Probably too much, leftovers like glue. However, a little half-and-half fixed that!

I got an Instant Pot about 3 years ago but it didn’t have any instructions (long story that isn’t important to tell). I’ve used it for roasts and ribs but was always afraid to try anything else because I just didn’t know how! I would watch videos and get totally lost on how to use the settings! The other day I finally realized I could get the instructions from the Instant Pot website, DUH 🙄 I made salsa chicken last night! Fried up some corn tortillas in the form of tacos like you taught me and a simple chimichurri. It was awesome! Next I’ll try your Alfaro because DAMN it looks good! Still nervous about using the sauté setting but I’ll just have to put on my big girl panties and dive in! Thank you all for these great cooking ideas and so simple to follow instructions!
