Oatmeal or scrambled eggs (with stir ins yum) at night and... stroganoffs, bbq meats for breakfast have often worked for me so go for it!

Thank you for giving the exchange flour to make it gluten free. I only use coconut, almond or Lupin flour since I'm Keto.

I’m an avid canner and saw this recipe. Decided to try it with my canned chicken. Chicken breast I did in chunks not raw pack. I did pretty much the same recipe other than I left the chicken chunks in the pot when making the sauce. I made egg noodles and dumped into the pot at the end and turned it into a 1 pot dish.....delish! Oh and I used cream cheese instead of the Boursin.

This is delicious! Hubs loved it and said to tell you thank you! I did have to modify it as the chicken broth I bought was opened before it was delivered and the onion soup wasn't in the bags. I mixed chicken bouillon with a cup of water and added a packet of beef a jus with some extra onion powder. Served it over noodles w/garlic knots. OMG was it good.

This looks absolutely delicious! Honestly though I would just make this in a pan on the stovetop. Chicken cutlets are so easy to cook.

I added up the cost of all the ingredients. I estimated $2.00 for flour, garlic, butter, and chicken broth but everything else is the price I paid before sales tax (which is 2% on food where I live). The total is $30.93. If this makes 6 servings, that is a little over $5.00 per serving which seems to be the cost of nearly everything I make. You could definitely get the chicken, Boursin cheese, and olive oil cheaper in bulk at Costco or Sam's and bring the cost down to maybe $4 or less per serving.

Hi Jeffrey. Coconut flour is OK for dredging, but have you ever tried unflavored whey protein isolate powder 1:1 for AP flour for dredging and batters? I use it as a low carb alternative for fried chicken.

Made this last night but used frozen cheese tortellini because I did not have a pasta I wanted to use. OMG, this was so good!!!! I also cut two chicken breasts into cubes instead of cutlets. My family loved it!!!!!!

The flour probably thickens the recipe some. How has almond flour worked in other recipes for you? If that's all you have I think I'd go ahead and try it. I'll probably be trying the whole wheat that I have.

I use 1/2 almond flour and 1/2 ground pork rinds for any chicken or pork that calls for breading. It’s REALLY yummy!

Almond flour is great for many things, but using it as a coating for chicken isn’t one of them. It’s prone to not stick and clumps to the bottom of the pot.

I’ve actually had success using almond flour as a coating. However, I’ve only used it along with the ground pork rinds, so maybe that makes a difference? 🤷♀️
