Alex and I are off on an adventure to St. Lucia this week and I am SO excited to explore a new part of the world we have never seen or experienced. Join us as we check into the breathtaking Jade Mountain resort (literally speechless haha!) and our first couple of days taking the beautiful surroundings in, with an incredible hike! Alex, plantain is easy to make. Peel it, slice it as thin/thick as you want and fry it in a type of vegetable oil. Take it out when you feel you like the colour of the skin, slightly yellow-brown. Sprinkle with salt at any point in the oil or after.

Ooh forgot to add that make sure the oil is a bit hot before you add the slices and you can cut it in round circles, long strips or squares. Kind of like frying chips but quicker and easier lol. Love you guys. :))
