"Fast" = 300kph or 200kph? The difference is dramatic for settings. Odometer reading has a huge influence based on the age of the suspension oil. 10/10/10 is a known track setting but it fails after 7-8 track days and needs to be 12, 12, 12 or 14, 12, 14. I suggest you start at 10,10,10 and see how your motorcycle behaves and test form there.

Not sure if you could answer this - what DDC settings would mimic the "road" riding mode?

Road is a rough surface, rarely consistent. The critical data point would be odometer reading and oil age for the forks and shock. -2 would be a good starting point to work from, then go in increment of +2 towards maximum and see what feels best for your ability, roads and speed.
