Hi, if active dry yeast is slower than instant yeast..does it mean that proofing of bread when dry active yeast is used should be longer?thank you.

Yes it does! Instant or rapid rise yeast has much shorter proofing times :]

Hello, Thankyou for your great baking show! I have bought a type of yeast in a plastic container stored at room temperature. It is tiny dried balls or pellets. Is this just a form of dry yeast? Should I grind it to make it comparable to the dry yeast in packets? Do you know the ratio I should use? I thankyou so much for your help if you can! Thanks in advance! 💜

Active dry yeast is simply a type of dry yeast. All three yeast packets in this video were dry yeasts.

No, instant yeast is designed to be added directly to the ingredients. Active dry yeast need to be proved with water first.

Hi Rena, you can try your hand at making a sourdough starter. All you need is flour and water and once it is active you can use it to leaven your bread. Baker Bettie we have made sour dough and we find it’s best if the starter is in a jar, also if you are using the crock pot make sure the handle is metal, one we had had a plastic handle but it felt like stone, we didn’t know till it was in the oven. Also I have a question, do you know what flour you should use to have a more soft sour dough bread?

Hi, new subscriber here! I recently bought saf-instant yeast for the first time. I have read that instant yeast is different from rapid rise. I also only really have experience using active dry yeast. I'm a little confused when it comes to the first rise when using instant yeast. A few sources I've read says to skip the first rise, and instead, let it rest for 10 minutes. Other sources say to follow through with the first rise, it just wont take as long to double. Can you please advise me on which is correct? Thank you!

Hi Jessica! I know, it gets confusing! So rapid rise yeast or quick rise yeast is always instant yeast. But instant yeast is not always rapid rise yeast. Does that make sense? Instant yeast is formulated in a way that it is very stable and can tolerate a bit higher temperatures. It is truly designed for commercial baking due to all the machinery involved. So saf-instant is basically similar to active dry yeast, but it is smaller yeast granules and is a bit more stable than regular active dry. When dry yeast was first made, it was necessary to hydrate active dry yeast before adding it to the dough. Instant yeast was then formulated so that it was ready the instant the package was opened and didn't need to be hydrated. THEN rapid rise yeast was formulated to be a form of instant yeast that also works quicker. I treat them all the same. Regular and instant will have a bit slower fermentation time than rapid rise. But I don't ever skip the first rise with any of them. The first rise is where all the flavor of your dough builds. You technically can skip it and still make bread, but it won't have much flavor.

Hi Sally, yes it does. You only need a very small amount of yeast to make your bread rise, but it will just take much longer. But it will also be more flavorful!

Why not show fresh yeast? That's the only thing I use. I freeze whatever I don't use and take it out when I need it.

Yeast is everywhere. It is a fungus and it is literally all around us in the air, in our bodies, in the dirt, and in food we eat. The dry yeast that we bake with is a single strain of yeast that is grown in a lab that works well for making bread rise quickly.
