Here it is, to answer your question about the difference (and similarities) between instant and active dry yeast. Please follow through the entire video so you will fully understand the difference in the process of using these 2 different yet similar yeasts.

Thank you so much for posting this! Usually, I use active dry yeast when I bake bread but today I decided to use instant dry yeast. I never used instant dry yeast before. I put the instant dry yeast directly to the dry ingredients and mix and knead the dough. Then I put it in a bowl to make it rise and I set the timer to 40 minutes. After 40 minutes, I checked the dough and it’s still the same size. It didn’t rise. That’s the reason I looked up how to use instant dry yeast and I saw this video. I live in Alaska and the temperature is going down as winter gets closer. Now I know what to do. I need to wait for a little longer because it’s cold inside our house. Thank you again!

Magandang araw po! It is always difficult to find a warm place even in our kitchen during winter time. I would suggest try putting it inside the oven, maybe this will help. Glad to help and God bless!

You actually added MORE instant yeast, 1t of instant yeast is 3.15g and active dry yeast is only 2.83g. Active dry yeast has a coating on it that needs to be dissolved first, instant does not, hence you can add without dissolving first. Using Baker's percentages you would want to have 2% of active dry yeast in a recipe and only 1% of instant yeast in a recipe. Hopefully this is helpful :)

@@carter_1 Did you make your own yeast? I just began using sour dough starter, but only like it for certain recipes because of the sour taste. I was hoping to keep a liquid yeast alive by beginning with dry yeast - hoping to avoid the sour taste and thinking I can just feed it every other day like I would with sour dough starter.

I could never understand why active yeast has to be proofed before hand.This is the first time I have read that active yeast is coated and therefore needs to be dissolved first.I have watched more than 100 bread videos. I believe you .Thanks for new info.

Thank you and it's a success for me after following your video. I used bread flour which is softer, smells good, a bit crunchy on the outside and it stays soft until the following day.

I used yeast today for the first time when it comes to making dough and I was so nervous because half and hour had passed and my dough didn’t really look different.. but then I placed it in a warmer spot since my home is cool.. and then an hour later it didn’t rise as much I expected. But seeing this video helped me to just trust the process haha

Thanks for sharing this video. I think I understand now why when I tried making dough for donuts it didn't double in size. I probably used an active dry yeast but didn't allow it to bloom first. Maybe next time

Thank u for sharing i have been baking for many years and i prefer instant quick rise yeast its not to yeasty taste on bread, active dry i find it taste bad on bread i dont like the smell.

You can still pre proof instant yeast, it just gives it a bit of a head start.

Thank you very much for your kind words, I really appreciate this. Usually 1 cup yeilds around 7 pcs. For the weight, it is 50 grams each pandesal. Doesn't matter which type of yeast I used. Thanks! Informative video! We now know you could get the same result regardless what type of yeast you're using. I guess you could interchangeably use them to what's available to you. My question is how do you substitute one to the other? Is it the same measurement? If the recipe calls 2 1/4 tsp of active dry yeast, how much of instant dry yeast would that be? Is it 1:1 ratio just like in this sample video? Thanks in advance! 👍🏼☺️

I just Google the recipes name... and type for example: Cinnamon Rolls using instant yeast. Sometimes Google is faster than vids if you're really wanting to get exact measurements and TRUST ME there's 1,000s of blogs on any topic imaginable!

New subscriber here, thank you for showing the comparison between these 2 yeasts. I have a question, I tried and baked spanish bread and I used quick yeast and even placed it in a warm place yet it did not doubled in size? Could it be the yeast? I still baked it and tasted good not only that big ☹️ as the usual regular size. Thank you in advance for your reply.

Magandang araw po! Possible po na yeast ang naging issue sa batch na ginawa nyo. There are only 2 reasons that I know of kung baking nagkaka problema ang yeast, 1 is if the yeast is expired, and 2 is if the liquid is too hot and namatay ang yeast. Ang ideal temp for the yeast is around 35-40C. Imagine this, kapag masyadong malamig ang tubig or kapag masyadong mainit ang tubig ayaw ko gamitin sa paliligo ko. Dapat katamtaman lang and temperature, maligamgam. Weird, but this works for me. :) God bless!

Magandang araw po! I store my active dry yeast sa fridge din, kapag gagamitin ko na sila I don't thaw or leave them in the counter. I just use them directly from the fridge. I hope this helps, God bless!

After forming your loaf, let it rest for atleast an hour or two so it will rise and be soft. God bless!

Magandang araw po! If it is me in that situation, I would pour out warm liquid and sugar to the instant yeast to see if it will bloom. Basically I would treat is as active dry yeast so I could see if the yeast is still alive. God bless!

Instant yeast is alive, active dry yeast is dormant or natutulog. You can add the instant yeast directly to your flour together will all the ingredients. It doesn't need proofing thus it is called instant. Active dry yeast needs proofing though para gumising siya and become active. 😊

Achilles Yap baka po you mixed it in with cold ingredients and/or salt? Pwede pa po 'yan irevive. Make an additional small dough that has the needed amount of yeast as per the recipe you are following, tapos milk/water, and flour as needed. I just did this yesterday kasi I accidentally added the yeast agad sa cold milk and butter hehe. I just kneaded the new small dough into the prior one. Hope this helps!

Instant dry yeast gamit ko.. I learned that once open you have transfer to a clean jar (sarado mo syempe yung takip hehe) then keep it refrigerated para di mamatay

can i still bloom the instant yeast as the active dry yeast? will it change the effect or taste , and i just want to know why my bread does not get golden brown on top even i brush it with egg wash or butter, it looks like it is not cook but it taste a little bit better . is there something wrong with my oven..?

Magandang araw po! Re instan dry yeast, I read in the comments na ung iba, un daw ang ginagawa nila to make sure na mag bloom ang yeast. I have never tried that before, but I think it would be safe to say na wala syang effect sa final product. Regarding naman sa color, try to increase your temperature by a little bit, but be mindful sa ilalim ng tinapay nyo, baka sunog na ang ilalim ung itaas hindi pa masyadon ggolden brown. This video is informative! I have question in mind that I want to ask. I just started baking career few days ago and I need to learn. There are breads that requires me to use active dry yeast and the thing is I don't have it with me, Can I just use instant yeast instead? If yes how will the process be? Will it be the same way or it need to be reciprocated?

Magandang araw po! Congratulations on your career! Disclaimer lang po, I have no formal knowledge sa baking, so please take my advice with a grain of salt ha. As far as I know, you can use instant dry yeast instead of active. Iba lang po ang process. Instant dry can be placed directly sa flour, where active needs to be proofed. But as others have pointed out (including my friend who went to culinary school), they are still proofing the instant dry just as they would do sa active dry. Same results din lang po. Maalaga lang is wag masyadong mainit ang tubig nyo para hindi mamatay ang yeast. I hope this helps and God bless you on your new career! :)

Hello I just saw this video I want to make cinnamon rolls, the recipe calls for 1 packet of active dry yeast I only have instant so I'll be using 1 packet of that. Can my milk, buttermilk, & butter be at room temperature will that activate the yeast? Recipe also says to let dough double in size about 1- 1 1/2 hrs then after the rolls are in the pan the rolls have to double in size again for 1 - 1 1/2 hrs, would the instant yeast still take that long to double in size & does it need to rest again? Sorry I've never used instant yeast before.

When you use instant yeast there is no need to activate it. Add it directly to the dry ingredients

The rising of the dough depends on the total amount of time and most importantly the ambient temperature of your surrondings. The more warmer it is, the shorter the proofing time for your dough. Hope this helps, God bless!

I use Allisons active dry yeast and do not dissolve it first in a bread machine I put wet ingredients first with salt and sugar then flour, bread enhancer, milk powder, and finally the active yeast never had a problem with it it comes out really nice I prefer it to the instant dried yeast and get better results

On my experience, both of them would yield the same result. As a rule of thumb, the fluffier it is while proofing, the fluffier and softer the bread will be. Hope this helps, God bless!

Maski saang liquid pwedeng gamitin ang active yeast hind lang sa milk, the difference ang active yeast you have to bloom or activate it first for several minutes while ang instant yeast no blooming required. pwede mong ihalo agad-agad.

Hi. Thanks for showing this video. Now I know the different between these yeast. There is 1 question I want to ask you. I saw many recipes using instant yeast instead of active dry yeast. According to "mr google" we can change Active dry yeast to instant dry yeast by multiple it 1.25. Please advice me if you have the same thinking or you have other way. I have active dry yeast at home and I don't want to buy other yeast. If I just use this active dry yeast so I can get the same result on bread making. Thanks, Rich

Magandang araw po! Based on my experience (non-pro, just home baking), I substitute the same amount of active yeast and instant yeast without any issues. Again, this is just y personal experience, there might be professionals who might say otherwise. I hope this helps and God bless!

Rich C kitchen, pls advise which type of yeast works better for making steam bun or lotus Pau? I'd tried 3 times making Steam buns but failed. The skin is hard when it's cooled. It's not fluffy and looks like it's not rising at all. Usually how long does it takes to rise? I heard from friend saying that over fermented dough can be sour in taste. Is that true? Pls reply. Magandang araw po! I have never made a steam bun or lotus Pau yet, although I have tried to make siopao before. We used active dry yeast and lard instead of canola oil, and it makes the dough whiter and softer. Other than that, I cannot give you any advice on which yeast is best for steam bun.

Thank you for your work, Ive been using trial and error with making coconut milk bread and ive learned that mishandling your yeast will affect the desired results of the bread. I will confidently go back to the kitchen again lol Thank you

I still bloom instant dry yeast and get the same result. Natatakot kasi ako ilagay sa flour lalo pag mag lalagay na ng asin and di ko rin sure kung tama ba ang temp ng tubig ko. Natatakot din kasi ako baka di sya mag activate pag diniretso ko sa flour, pero ngayon po gets ko na. Salamat Sir napaka informative po talaga ng mga content nyo. More power & stay safe!

i have two questions... 1...how we can remaing yeast safe.. from spoiling .. or expire... because my yeast did not worked. after 2nd use.. after two month . after first use.. first use was very good.. but after two month it not worked.... where i have to keep it 2. should we keep the dough in refrigrator if we want to use it later.... and when we can keep the dough in frigde. after knead... or after doule in size. or 2 or 3 hour later

Magandang araw po! 1. I keep my yeast in an air tight container (I only use ziplock) inside the fridge. I have been doing this eversince and I have not encountered any issues at all. About expiration, yeast is a living organism and they have an expiration date, so we cannot do anything about that. We can only prevent them from being spoiled. :) 2. If I want to bake the day after, I place the dough inside the fridge. I place them inside after I have shaped them to the final form of the bread. They will still rise, but on a slower pace because of the cold temperature inside the fridge. When you are ready to bake your bread, leave them on top of your counter for atleast 30-45 minutes to warm the temperature of the dough. I hope this helps and God bless!

Thanks for sharing. Hasn't the 2nd batch got an extra tsp of sugar? That's 33% more sugar than the other batch, wouldn't that affects the result ?

Hi, for the second batch, I used the sugar to make the yeast bloom since the yeast feeds on the sugar in the warm milk. It is also around 16% additional sugar only (I used 2 tbsp of sugar on each batch and 1 tbsp = 3 tsp) so I could say that I can neglect the additional 16%, or 1 tsp of sugar to make the yeast bloom. To answer your question, we did not notice the difference in the results because of this extra tsp of sugar. God bless! :)

Magandang araw po! ANg gamit ko po lagi sa bahay is active dry yeast, bihira po ako gumamit ng instant dry yeast. To answer your question, kung ano po ang available saakin un po ang the best. On my experience both works the same way naman kaya pareho lang. God bless!

What makes the bread soft? Is it through kneading or in the ingredients? Is egg makes the bread soft for a longer time?

Magandang araw po, there are a lot of factors and it mostly involves kneading and the yeast. For my bread, I usually knead 2 cups atleast 10-12 minutes, then I let them rise for atleast 3 times (the second rise is considered rest for 10 minutes). God bless!

I knead bread dough or any dough hardly at all. I do it before it has to sit to rise, but I don't over do it, and once it rises I never punch it down, or knead it more. I don't even flour the board. I just cut pieces from bowl, and shape and put into pans, and rise again, and bake. This is how I do it, and what works for me, others might not like or do it.

The pros said that there might be a little bit of a difference in weight, but for me as a home cook if the recipe calls for 1 tsp of instant yeast, i substitute it with 1 tsp of active dry yeast. So in short, yes, for home bakers.

Magandang araw po, they are not the same, cream of tartar is primarily acid, where yeast is a living organism (fungi). I use cream of tartar in making meringue, but never on making bread. I have been reading if you can substitute cream of tartar in place of yeast, but it looks like you cannot. I hope this helps and God bless!

Is there any difference in smell of instant dry yeast and the active dry yeast? (before using it.) Or how I would know if my yeast is instant dry yeast or active dry yeast? Because I forgot what I'm using now, cause I transfer my yeast in the container. Thank you for sharing.

I don't think there's a difference in odor between the two. For the process, some pros that I know blooms both the active and dry yeast the same way by adding it to a warm liquid. Still gives the same results.
