Why is degree of polynomial only the largest one? Is there no use to adding up all the degrees in the polynomial? Why is the term not just "largest degree" instead of just degree to avoid that confusion

Because as he says, the rule is that one level below addition or subtraction you do nothing. And degree is the largest possible exponent in all monomials so it makes sense that the largest exponent in a polynomial would be the degree. Hope that helps!
