Because that's what wrestling used to be. The emphasis was on having a larger than life personality more than it was on physique. The emphasis on physique came from Vince McMahon when he took over the WWF. Vince was always obsessed with physique and size personally. He himself was an amateur body builder and this translated to his judgement of what was talent in his wrestling promotion. At one point Vince tried to start a recurring bodybuilding competition owned by the WWF but it ended up being a failed venture. So it became known and common that being in extreme shape and/or or extreme size whether muscular, height, or both was a good way to politick at the WWF for a higher spot on the card. This naturally led to steroid use which Vince himself reportedly encouraged and even partook of himself. The steroid use led to an investigation when the government eventually started cracking down on steroid use in sports in the 90s. But the emphasis on physique survived the investigations and is now the status quo in the wrestling industry as a result. Vince reportedly fired the wrestler Gangrel because of what Vince saw as his inability to stay in shape. If you go to or watch any shows on the indie circuit it's actually started a relative return to the pre WWF times with indie and amateur wrestlers. You'll see all kinds of different physiques on the indie circuit.
