Kahi is one of the most famous pastries in the Iraqi kitchen, and it is an old food that people stop asking for in front of bakery shops, especially in the morning period during the holidays, in order to eat it during their breakfast, and they usually eat it with Iraqi Qaymar.
the components
1 or 2 cups of flour, 1 or 1.5 cups of warm water, 0.5 teaspoon of salt, 0.5 half cup of oil or melted margarine. It is prepared first by sifting flour and mixing it with salt, then adding warm water and kneading the dough for 10 minutes, then covering it and letting it rest for 15 minutes. Roll the dough in the form of a roll, cut the dough into 7 equal pieces, cover the pieces with ghee or oil and leave them to rest for 30 minutes. Spread each ball on a flat surface very thinly with the help of ghee, then add a tablespoon of melted butter. After stretching it, it is spread on the piece, then it is folded on both sides in a rectangular shape, then it is also folded from the other two sides so that it becomes square, and so on until the amount is complete. Leave the squares on a greased tray to rest for 15 minutes. Spread each piece of roast with light and quick pressure from both sides, and place it on a tray lined with butter paper, and let it rest for 15 minutes. Enter the oven at 200 degrees from the bottom for 10 minutes. As soon as it comes out of the oven, it is watered with cold syrup and served.

For those wondering, the watery looking liquid being poured onto the bread from the tea urn is a cardamom infused sugar and water syrup, and the cream cheese looking stuff is an Iraqi style heavy cream.

ولكم بمثلها يا أقرب شعب عربي إلى قلوب العراقيين بالمناسبة اكلة الكاهي العراقي معجنات تعمل مثل اكلة جزائرية تسموها المسمن لكن الكاهي مثل ورق الكولاش بعد ذلك يضاف له ماء قطر سخون و سكريته لطيفة و ليس ثقيلة مثل سكر حلويات الجزائر هذا الأبيض الناصع نسميه القيمر وهو حليب الجاموس الدسم جدا يتم تسوينه ومن ثم يبرد فيطفوا القيمر هذا النوع اي القيمر يوجد فقط في العراق ولا يوجد في اي بلد في العالم العراقي اذا يمضي ٢٤ ساعة على القيمر .... فلا ياكله

AMAZED the calmness of each employees despite so many people to be served! Still manages it with smile and professional conduct! Also, the hygiene ( wearing gloves) is emphasized all the time by all the employees! Hope to visit Iraq someday to experience this atmosphere and wonderful dish. Such videos rarely being shown in mainstream media. Thank you for sharing! Love it!! 😀🙏

Samoons were my fav , we also used to buy ice cream boxes. They would fill it on our requirement. When we left there , we bought a fully automatic washing machine etc. This way back in 80's

To the people who say why there are no women because it is so crowded, they are all men. According to the customs and traditions of our Islamic religion, a woman cannot have direct contact with men. It's funny to notice some "Kiri" cheese boxes in the background at 6:16 (the blue ones). It's a famous cream cheese from France, that is usually quite marketed towards children (but that still reminds good meal memories to many grown up people) 🙂 Everything looks delicious in this video, would love to try! I have no doubt that the Iraqi people are lovely, kind, and friendly people, as are the people from other countries in that area of the world I have had the pleasure of meeting. However, though it says this is a street breakfast scenario, I am wondering if it is some sort of men’s prison or other male institution meal time. As for tourism, I’d like to think that if I went there I would see women enjoying breakfast out being fixed for them also. These countries still have a long way to go to catch up with the world where women’s rights are concerned. Blessings on them all…even the ones not enjoying this yummy looking breakfast. Thank you for sharing this video.

😂 Всевышний Создатель запрещает чтобы посторонние женщины и мужчины взаимодействовали между собой соприкасались например глазами встречались ) это запрещено для сохранения целомудрия. Европейцам это сложно понять, поскольку целомудренность там давно утеряна.

沢山のお客さんがいるシーンを目を凝らして見ても、多忙な従業員のシーンをよく見てみても、「どこにも女性が映っていない」という事実。

Because most of the women in Iraq have left, in addition to the fact that women have designated gatherings at specific times, because this is one of the customs and traditions that women do not go out at a time of overcrowding. In addition, women cannot get to know men and go out for dating, because most Iraqis are homosexuals, also their families refuse to.

The time men eat in this restaurant is 4:00 in the morning, and our women sleep at this time😂. They do this to ensure that the rest of the time in the restaurant is for families and women to relax.

We are a social people, we have good relations with each other even if we don't know each other, Iraqi society can be summed up in a few words: modesty, dignity, simplicity, generosity, hospitality, religiosity😊

My 3 grandfathers came from Iraq. Today I praise God for living in Israel, but the food that my grandmothers used to prepare is only known to be prepared in Iraq.

We are an Arab Muslim community with our own customs and traditions. There are also special gatherings for women. I hope you learn that we are not like you and we are different from you. We are a nation different from you. We have our own culture, religion, customs and heritage...Mind your own business ok ? You have an identity crisis that you better take care of.. :)
