IIRC Overwatch case rounds are assigned randomly since multiple people see the same case. You always watch the same amount (8) of rounds. I believe the explanation for it was so Volvo could better analyze and stop cheaters since they have access to all the back end info and can deeper analyze it.

About 9min in, that's called LegitAA, it's not spinbot, but is the same sort of thing. It creates a soft of fake model which displaces your head from where it actually is (desync).

The reason the demos have really bad frames/seem to be lagging a lot is because of the cheater using fakelag, which is used to make them harder to hit.
