@@zuychanTo be fair, it's a system implemented so employees be more diligent and minimize mistakes, culturally and legally acceptable in some countries. In the case where employees screw up big time and caused losses to the business, employers may deduct not more than 20% of employee's pay provided the amount after deduction is above minimum wage. Given that employers can only transfer not more than 10% of the business risk to employee, for example, say a waiter served a $100 dish the wrong table, the owner can only deduct maximum $10 from the offending waiter's pay. So if you see someone having a pay cut of $100 they probably caused a loss in food cost of over $1000 which is insane. However, not all HR systems are perfect, aside from punishment, a company should also have proper trainings, compassion and reward systems in place to encourage good behaviour and work ethics. The problem with chef Susur was he failed to study the local culture and laws of Canada, or just didn't have a good consultant. He made the wrong rules and owned up to it by abolishing them, paying the fines, and compensating the employees, that goes to show his kind intent I suppose?

In the late 80's and early 90's I lived in the Queen West part of Toronto. One night in October a friend took me to Suzor's restaurant about a block south of where I lived. At first, the mis-matched cutlery, plates of every kind and the tiny space itself didn't make much of an impression. But then the food began to arrive and... I was literally enchanted. To this day I remember everything served. And Suzor himself looking so dark and intense. We walked out and I sort of floated off to my loft and lay on the sofa in front of the fire thinking, 'that was magic, in every sense'.

A chef's role is to cook for others, not just for their own taste. The reason why a mother’s food often tastes so good isn't just because of her cooking skills, but because she adds love and care into every dish, which makes all the difference. Some chefs boast years of experience, but many seem to forget the most fundamental rule: cooking is for others. It's like writing a book-you can tell if an author is skilled by how simply and clearly they express their ideas, making it easy for the reader to understand and enjoy.

I think many of the home cooks have had family members tell them (often!) that their cooking is awesome. And their "signature" dish is the absolute least favourite meal in the dinner rotation.
