This week, we're introducing our latest limited box and our first box release for 2022.
Every month we release a box featuring limited lots of coffee, specially selected to highlight one particular variable with each release. We have previously featured coffee from our partner farm Pillcocaja in Ecuador and the world-famous Daterra in Brazil. This time around we're incredibly happy to share with you a selection of Carbonic Macerated coffee sourced and processed by Project Origin.
We're also sharing our insights into the roasting process and providing our thoughts on what to expect from each of these coffees.

This is the same reason why the big anaerobic slow dry (ASD) movement in Panama is so frustrating. However, many leading farms are starting to make greater efforts to promote their lesser valued varieties like catuai being done in the ASD processing method and then instead share their geishas as standard washed or traditional natural processed coffees. The ASD catuai and ASD geisha from Lamastus Estates taste almost the same and despite that most Panamanian producers are processing the majority of their premium lots as ASD since the demand is there. Makes me think we're going to see a renaissance of beautifully crafted washed geishas that showcase terroir and variety. I know thats where I feel like my top dollar is best spent.
