Fun experiment & I appreciated it! I just purchased a NutriMill with ceramic stones & am about to try the fresh milled flour with my sourdough! I didn’t plan on sifting but I think I’ll try some hard white wheat berry flour with the hard red flour.

You gave me the courage to start my sourdough journey, which began about 2 weeks ago (in the middle of record cold (-40 F windchills) temps + blizzards, great timing I know 🤣🤦♀️🤷🏼♀️). After a bit of trial and error with pivots, I’m happy to report my starter is finally mature and ready! (I think she’s been ready for a few days, but I kept babying her just to be sure). I just topped her with flour and popped in the fridge until I’m ready to make bread this weekend! Wish me luck!

Made my 1st loaf today, It tastes good, has nice holes, and a crispy crust, just a little dense/flat. I’ll keep trying though.

I cook in a cast iron Dutch oven and I have found using a proofing container with measurements helped to get the timing right, when it's double the amount of your starter mixture its ready. You'll get it and I bet it was yummy anyway! @@HomeGrownInTheMidwest

I have three of those cast iron bread pans, but I’m chicken to put the dough straight in so I use parchment. It works fine but, I’d love to see a video of how you prep your bread loaf pans so they don’t stick. Also… another really good video.

Hi, I was wondering where you got your pottery bowl that you used to let your bread rise in, but also all the pottery dishes you have, mugs, what you used to put starter in, and I see one has pens, pencils and scissors in it? My pottery bowl was a gift from my Aunt. I’ve done collaborations with Keri from @siftceramics for most of my mugs you see me use as well as my starter clay pot.

Forgive my ignorance, but why do you put the egg shells in the drawer under the oven? Does that dry them out?

Yes dry em out before we blend and put in a big container to feed chickens

It is hard to get used to the mill prices in US or Canada. I have just checked the price of european producer selling mills in Europe ( ie Bosch) it is like half a price 😮 Of course - the model - the power - the capacity might be a bit different. But still... Thank you for a video 😊

Yes, it's funny how my mom used to buy bran to make bran muffins and now she grinds her wheat and there's the bran. I agree I don't have much use for it except the chickens! They love it.

I have the Komo manual powered mill and the flour that it makes is much better than my wondermill. I love my wondermill for its no brainer as for milling and dream of the Komo mill but the price is just a bit high. The hand komo is great but you are not going to mill 3 cups of wheat berries in it. Tops for me is like a 1/2 cup 😂

Rinse them with not quite hot water. Too hot and you risk melting away the beeswax. They do have a shelf life because of this.

Fresh ground and store bought whole wheat are a little different in how they behave. This is hard white wheat.

Oh wow, I did not hear that. Thankfully we are on the opposite side of the country to Quebec and very rural. Banning wood burning stove seems to be more of a city thing so far.
