When my mother, at age 18, announced that she was no longer going to eat meat, my grandmother panicked. She called her sister. "What can I make Lilly? She won't eat meat any more?". Her sister said, "Make her eggplant steak." And so she did. Mom loved it, and lived on for years. I don't know what the recipe was, but apparently Grandma could out-cook Gordon Ramsey when it comes to eggplant steaks! Mom is alive and well, and about to celebrate her 94th birthday. She has not eaten meat since 1942.

@@wachoindeed6848 read the context it’s clearly a typo. Any intellectual can see that, later in his heart felt story he says that their grandma was panicking that her daughter won’t eat meat anymore. Life is more then first impressions. It’s about seeing the intentions behind the actions. It always for me feels like more of an image thing. Like, back in the day people with money ate steak. Then some people see being vegetarian or vegan as being "sissy", or "weak", and then so much more in there I'm not about to get into. Maybe even sort of like bullies and how they pick on others to reaffirm their own notions of self worth, but I have housework to go do so stay safe and take care, people.

There is a variety of aubergine/eggplant called "Meatball". Not only more meaty in flavour but it also does not go brown when cut. A chef should know the varieties of ingredients available.

I don't think it's fair to equate "does this pass as a steak substitute" with "is this good plant-based food." Plant-based food doesn't *need* to resemble meat. Your reactions make it sound like it's a good eggplant dish, just not a meat substitute. If so, then, yes, Gordon was able to make a decent plant-based recipe.

Thats totally fair! I come from the world where I try to replicate meat, so I think if he would have called this braised eggplant steak, or braised eggplant then I would have been a little more ok with it. But he sold it as "Vegan Steak Dinner" which to me means it was meant to replicate steak. The dish was ok, but I wouldn't have been able to eat much of it beyond it being a side dish for something. If you REALY love eggplant then you might like this a lot.

yea, my family doesn't WANT vegan/vegetarian food that tastes like meat (I just find these videos cool and interesting), and I honestly get annoyed at the idea that vegan/vegetarian substitutes should taste like meat. you can have chicken steaks and pork steaks and such, and I don't think they're meant to mimic beef steaks. same with bacon, turkey bacon is a thing. sometimes, when you make/order a veggie burger, you want a VEGGIE burger, not a beef burger made of plants (restaurants are replacing their veggie patties with beyond or impossible burgers and it's irritating). unless Gordon Ramsay directly claimed that this dish is meant to mimic a meat dish, I don't see much of a problem with calling it steak. "vegan steak dinner" shouldn't have to imply a near-perfect (or at least attempted) mirror of a beef steak dinner

Do people really expect to get a steak out of an eggplant 😁. You are right. Sort of silly by Ramsey to try and sell it to youtube watchers as a steak and sort of silly to have taken his mildly humorous (?) attempt so seriously. My friends are vegetarisn (not vegan) and served roasted portobellos to us one night and called them steak. They were good but clearly if you have been eating beef all your adult life uou know they are mushrooms with some "steak" flavorings. Very edible flavorful veggies but definitely oversold as steak.

I have an adult onset allergy to potato and tomato too 😩 I miss potatoes lol. It’s hard to find foods and eat out because so many foods have potato in them. Even in ways that the ingredient is seemingly disguised as “food starch”.

@@SauceStache I figured it would be bad, the only way you could get anything close to steak is to really cook the moisture out of it and even then it would probably be bad. I have used eggplant and other squash to make "fish" filets and it has an ok texture for that when it's done right.

@@carterhiggs6466 I just happened upon this video by mistake and watched it twice. The first mistake I saw was he added red wine before roasting it. I immediately thought that was weird as eggplants are like watermelon as they're mostly water. I immediately checked out Gordon Ramsay's video and although it's not very clear, he definitely roasted it with just the dry rub seasonings. This would have dried out his eggplant way more than this as this was being roasted on top of red wine, which is liquid. Don't know how it would taste but, I can definitely tell you Gordon Ramsay's version isn't going to be this mushy mess.

Most meat alternatives that I've seen are pretty gross, but the Indian vegetable burger and radish steak looked quite appetizing.

a good eggplant steak is the classic 'parmigiana di melanzane'. You cut the eggplant into thick slices, then you coat it with breadcrumbs and fry it until it is crispy. Then you put it in the oven with some mozarella on top until it melts. And finally you serve it with tomato sauce. I know this channel only use plant food, but I think you can find good alternatives for the non plant ingredients on this recipe. It is relatively easy to make and tastes really good.

it does not taste like steak.... it is shaped like a steak and people make parmigiana with real steaks also. I am a meat eater and I actually prefer the eggplant one over the regular steak one, because I like eggplants. I believe the original recipe is the eggplant one but I'm not 100% sure.

I saw Merle’s video about the egg plant steak and decided to try it out yesterday. I didn’t follow the recipe and it came out great. After removing the skin I marinated it in some dark soy sauce,garlic,rosemary and red wine for an hour. Removed it and let it dry. I rubbed it with smoked paprika,coriander and black pepper. Threw in into the oven for 45 minutes. I started basting it with the marinade but never let it sit in too much liquid (to prevent the mushy texture.) The texture came out great and the taste resembled pastrami. I was actually proud of the outcome and I will definitely make again and again.

Hi I'm a Filipino and you can also grill the eggplant. We always do dat to make "tortang talong" and the eggplant taste just like "gisang talong" Gourdons recipe is just like a more expensive and more hassle than making ginisang talong.

Thank you for the taste test. I think Gordon Ramsay was aiming at a very good eggplant dish, and I believe he did just that, he’s never been into mimicking meat, the plant based recipes in his repertoire (and he has a few of them) try to put an emphasis on the vegetable and its natural assets. I for one seldom eat aubergines, except as caviar (his recipe actually) and this recipe made me feel like trying :)

I feel like the problem comes more from the title 'steak' than the dish itself, at least from what most people say. Another thought, wouldn't it be possible to sear the eggplant off before putting it in the oven? Just to get a bit more texture

The Mid-Eastern women we know who are proficient in cooking eggplant to a meat-like texture always use the salt dehydration technique first. The water will leave the eggplant flesh and dilute the salt. It will be come firmer and more meat-like the longer you let it dehydrate.

I think that's the point. It's a "vegan" steak, not an actual "steak" (meat). The important thing is: is it taste good? well your wife say yes so that would pretty fair imo. Personally, I would probably use a dough of tofu & tempe & wheat to make the base of "meat" mix with some umami flavor ingredients like mushrooms or certain types of seaweeds. Basically a vegan juicy meatloaf with the shape of a steak LOL

Well done for sharing your recipe. Personally, I believe that Irrespective of the types of ingredients/additives one uses to cook an eggplant with the intention of converting it into a meat steak, an eggplant will always be an eggplant. Just loud thinking 🤔

You should consider to dehydrate The eggplant. I'm pretty sure The textura would be incredible. Look for the italian recipe "Melanzane Sott'olio" they use a dehydration method with salt. It's not cooked! Serious...the texture of this raw cured eggplant is amazing!

You DO REALIZE steak also means thick slice of something right? (i.e., Swordfish steak, Mushroom steak, Cauliflower steak Salmon steak...) So eggplant steak is just a thick piece of eggplant. Not eggplant that tastes like beef.

if you want just repeat the roasting part and peeling off the skin, and then squash it and add egg\s depending on how big the eggplant(and the egg should already beat), and then fry it. There you have it "Toratang Talong"

If you slice and salt the eggplant to draw water out you'd probably be happier with the texture. But at that point you might as well just make eggplant parmesan.

When I make aubergine steak I prick it all around with a fork and roast it in oil for like an hour in an oil and seasonings. I then fry it in a cast iron and add a sauce as to crisps up.

Degorging the "eggplant" or aubergine and then press it. I would assume removing the minority of the liquid and then pressing it would result in a much firmer texture. Baking it wile being pressed would also help. Only worry would be the moisture but I'm sure a vegan specialist maybe able to add additional techniques to improve upon my idea.
