Ok ladies & gentlemen - So I decided to get daring and use my Dutch oven again, only of course on a different burner. It worked fine! Because the damage on mine is on the bottom outside enamel, It doesn't affect the food inside, and it apparently doesn't affect how it heats on the inside. Sadly, I still need to replace my cooktop, but I've been putting that off because of course it's going to be expensive. Right now I just keep that spot covered up with a pretty white tea kettle. 😆

@Dylan Allard - I noticed that too... I would imagine it's because when it's empty sitting in the oven, it's going to heat uniformly. When it's sitting on the stove, it's of course going to heat the bottom more than the rest.. just guessing. Anyway - a very expensive lesson learned for me. 😞

That’s exactly how mine chipped 😭 the recipe stated to preheat at 450 degrees for 30 minutes... I failed to realize that it is safe up to 400 and shouldn’t be warmed up empty. I am guessing the preheat instructions are for non-coated cast iron.

Hehe, same here. Bottom line: I think it accelerates wear to bake bread with these things. A Dutch oven without an enamel coating would probably care less. I'm considering sourcing an cheap battered second hand Dutch oven just to make bread.

My mom didn’t cook a lot of different foods when I was a kid, so I had to teach myself how to cook with cook books and now KZbin. I’ve been cooking for 17 years now (I started teaching myself in childhood). At least we’re resourceful enough to look up what we need to learn. 🤷🏻♀️

There are lots of Dutch ovens that are not enamel coated, it's just cast iron. Or the outside is coated, not the inside. I have one like that. So, if you chip the enamel, you've exposed the iron, so you're completely fine. The only danger is further chips, and eating the enamel.

Exactly, ingesting enamel isn't a good idea. Chips can get stuck in your colon and they are very sharp.

Actually older enamel (respectively base layer substance) often contained lead and/or cadmium. So this info may be borderline dangerous in case of chipped vintage cookware.

This is based on the real state laws for lead paint inspections for homes built prior to 1974 (i think that is the year, the US put lead in EVERYTHING up to that point) anything newer, especially in the 2000s id be more concerned for where the pot was made and what those countries regs are...

I somehow got a pinhead chip in the bottom of my Dutch Oven, and only use it to make bread and THAT is even using parchment paper and starting with a cold oven and cold D.O. So I'm thrilled to know that it's still OK to use....whew! THANKS!!

I have a beautiful La Creuset that my husband used and to clean it he took a coarse scrubber AND scouring powder......I was laid up in bed sick at the time so he hid it from me for over a week. Now our running joke is he can't look at the pan because it hasn't forgiven him. You can get them reglazed but honestly it still functions so I'm not worried about it for now.

Although my comment was aimed wholly at anyone that thinks that while his wife was sick it is somehow 'bad' that the husband tried to do something he might've been uncomfortable with, or to your point, be ignorant with. Back on the day PBS had The Fugal Gourmet and he advocated waking your spoon handle on your hand over the pot, I've done this ever since I say that show when I was a kid. You don't bang up your pans, and usually what's on the spoon slides of into the pan. Oh and don't forget hot pan, cold oil food won't stick lol.

Thank you for pointing out that scraping metal on enameled cast iron is bad. There's a surprising number of videos that recommend it for cleaning and obviously it ruins the enamel. Not to where it's not usable obviously but it looks horrendous.

I was always taught to never use any metal utensils on such pans and pots. Question: if a tea kettle has a coating on it and it chips and then there are rust spots on the bottom, inside of the teapot, is it okay to continue using it - especially after cleaning it thoroughly on the inside?

I have pure cast iron cookware now and use it for cooking most of the time. I also have a carbon steel wok which I got at the local military base years ago, and still some non stick cookware which is the last I will buy and throw it out when it begins to peel the Teflon material into the food. I just recently decided to go back to cast iron cookware which my grandmother used all her life.

Not necessarily an "Is it Bad" question but I would love to America's Test Kitchen produce a series on different materials in the kitchen (difference between stainless steel, aluminum, cast iron, copper etc). Specifically I'd love to see a KZbin series about cooking on/with tin-lined copper pans. There is very little contemporary information about care/use/recommendations/limitations for cooking with tin-lined pans... But if I were to have an "Is it Bad" question, I'd like to know is it bad to use aluminum pans?

I would assume if the enamel is beginning to chip then it will most likely continue to chip into my food over time. The heat and thermal expansion of the enamel and cast iron are different, and a layer has already been broken.

Can you season the enamel inside of the skillet to keep the rest of it from popping off? Every time I use my skillet, the enamel pops off while I'm cooking.

my fry pan and oven pot are plain cast iron without any coating as I am rough when cooking. But i always clean up after cooking, season the skillet after heat up. 15 years passed my skillet and fry pan are both in perfect condition. They can last forever.

This occurred on a wide spread basis on the first series of Martha Stewart Dutch ovens. I think there was a recall of those pots. Mine bubbled up all over the interior of the pot. My second MS Dutch oven has not done that.

It is extremely dangerous to tell people that using chipped ECI is okay. The enamel will continue to craze and chip and you will find broken enamel inside of your food. This can lead to internal bleeding.

There is actually no evidence for that. It's not like paint, there is an inherent bond between iron and enamel, that is not much more likely to chip when it's surrounded by an chipped or uncovered surface. Look at the top of the pan, that's often also uncovered and doesn't magically release the enamel either. The size of micro chipping, would not be much more dangereus than most other specs of things inside food you eat every day.

Is it bad if the non-stick pan is heavily scratched? If the skillet/pan is scratched and no longer sticks, should it be replaced? Also, above my stove there are wooden cabinets that go along the kitchen. Is it bad to keep pot uncovered? Will it warp the wood over time if there is nothing to take away or push the steam?

I have a Le Creuset Dutch oven which I love but I found it at a thrift store and it’s chipped. I could turn it in to Le Creuset and either get it re-glazed or they would give me a new one but I don’t need it. I like the thrill of having bought the Dutch oven 7 1/2 quart for three dollars. I also have a Lodge cast iron Dutch oven which I do heat in the oven without anything in it when I’m making a chicken. It gives a better Browning that way. Different pots for different dishes.

Mines just chipped, probably from climate change. It's sucks though, because it's on the bottom of it, and I was only washing it out to actually use. That made me so nervous. New Le Creuset owner. 2 Questions. - Is it a defect for interior enamel to have "orange peel" look... not completely smooth as glass? 2. Are 2 tinyyy spots around rim edge where colored exterior enamel is missing normal? Rest of edge is perfect. This is My First Le Creuset . Purchased directly from them. 8 qt Dutch Oven. I read "perfection" in all their marketing literature. Is this expected with enamel dutch ovens or was my expectation of Perfection for a $300 pot different from theirs? Thanks!

Ty. Is it still safe if I used steel scrubby. I was scrubbing stuck on brown hunch.and it was scrubbing it clean back to the white color but the middle was still a weird gray color. After doing this it looks good except the gray center witch I stopped scrubbing at that point in case I was hurting it. But the smooth glassy coating seems not smooth anymore like I scrubbed through it and now worry is it safe if I did scrub the clear finish off or will ceramic seep into my food. I love my oven but. Ow afraid to use it I’ll never use that scrubby again.

Don't worry, even a bit of steel wool scrubbing would dull the surface. People use that as a technique to get a matte finish on surfaces: You roughen it up and it no longer reflects light uniformly because on a microscopic level it now resembles fine sandpaper instead of smooth glass. If it's still smooth touch and you don't hard scrub it all the time, it should be fine. You could try baking soda and soap paste on the soft side of the sponge to make it a bit shinier again, followed by some smooth /not coarse/ toothpaste. That would take a few sessions over time of prolonged scrubbing to make a dent though, so restoring the shine is not an easy errand.

Hannah - What if the OUTSIDE part of the bottom has a big divot... like as in - I put a pot if water on to boil & forgot it & it got SO HOT that it actually took out a chunk of the bottom & broke my dang smooth cooktop of my stove? Is this still OK to use? 😢 And thanks - great video!!

What an awesome addition to the ATK family!! 👍 My question is… I have a relatively inexpensive full set of Cuisinart enamel coated pots and pans.They are definitely not cast iron underneath the enamel. (obvious reasons being price and light weight of these pots & pans). I’ve taken great care to protect enamel surface with respect to utensils used etc., however, during handwashing of these pots and pans it seems that “wear” streaks have started appearing in a circular fashion around inside of saucepots. I was baffled until I realized all of this damage must be coming from my rings on my fingers as I wash these all by hand & that is the only thing that makes any sense. I know these are cheap pans, but how dangerous is this with respect to my health since clearly this must be aluminum underneath the enamel?? Thank you in advance for your help!

If your enameled cookware is chipped and you don't want to turn it into a flower pot, you can strip it down to conventional cast iron. Just tell the man of the house you love it too much to give up and send them on a Saturday adventure with an angle grinder, flap pads, a dust mask and various grades of very fine sandpaper until silky smooth, then grapeseed oil it and back into the kitchen it goes. Not everyday easy but not particularly hard if you go at it slowly and gradually, and the effort for beloved items is worth it.

"Not to heat your pot when it's empty" - in the USSR we only had glazed pots and pans, as well as cast iron frying pans. No T-Fal which apparently thinks about us (I still have not figured out what exactly it thinks about us), no ceramic pans. Just good old steel or aluminium pans which will not emit any harmful metals if you do not scrub them hard enough, and let enough burnt organic material bake itself into the frying pan.

Help! My Le Crueset dutch oven that i've had for years has got a small chip in the enamel on the inside base and because I was quite young when I was given my set I didn't really look after it properly and now that chip seems to have rusted some. That sucks. 😞 Salts (both food safe and those used for cleaning, such as powdered dishwasher detergent) can cause pitting when it is in contact with many different metals in high concentrations for too long. I never considered this regarding cookware until about 10 years ago when I bought a new stainless steel pot. The pamphlet said not to use strong salts for cleaning and to bring water to a boil before adding salt. But I did to it as I've always done with my mom's old SS set since I was a kid and have never had problems with either the new or old. Shrug. I've never put them in the dishwasher (don't have one) but I do use powdered detergent (Cascade) in them for soaking and scrubbing burnt on food. They come out perfectly clean with no blemishes.

Is it bad that my le Cruset dutch oven has a chip on the bottom of the inside? I have always been careful to use plastic or wooden utensils with it but somehow developed a chip in the bottom. Is it safe to use? Have particularly avoided cooking anything with tomatoes in it but after seeing your video, I'm not sure if that is necessary. Used it for everything except baking for more than 30 years and miss having it to use. Inherited a smaller one from my mother with no chips but it is not big enough for some of my regular recipes.

As she said in the video, it's fine silica i.e. powdered glass that is baked on much like pottery glaze. It's chemically safe but I wouldn't want to swallow a particularly large chip of it. Lol. Tiny chips probably wouldn't hurt.

Not safe young lady. Those enamel chips can get in your food and if you swallow them they are sharp and the enamel has a high lead content, both reasons you DO NOT USE A CHIPPED POT if the chipping is inside. Stop using it immediately and call the manufacturer for possible replacement.

@@checo123 I think it's a sound policy. Kitchen Aid uses enamel on some of their beaters. They recommend immediate replacement if a chip occurs. The majority of these Dutch Ovens are all made in a Chinese factory. Do you want to place confidence in them? I keep getting notices my prescription medicine made in China has poison in it.

Should be yes. These Dutch ovens are enameled steel, unless except some crappy ones that are enameled aluminium. If you have exposed steel, don't let it rust though, the enamel coating is there mostly to avoid the steel from rusting when exposed to water.

how to clean them after a bad food burn where food get stuck on the inside or where food stains the inside. my 10 year old pots are so stained.

After a bad food burn boil water inside, pour half the water out and throw in 1/2 cup of baking soda. Let it cool down. Once cool scrub with a soft plastic or nylon bristle. Then wash/rinse. Last step pour in 1/2 bleach 1/2 hot water to the very top, let it cool overnight after at least 8 hours the stains should have lightened up or disappeared completely. Never use abrasive cleaners or brushes. You can repeat the bleach process twice if needed.

It's only bad when you had a chip in the bottom already, used it to cook dinner a few nights ago, and then discovered a SECOND chip *AFTER* you served your last heaping of leftovers on the 3rd night. UUUUUUUUGGHHHH... Somebody in my house just ate glass last night!!! Nobody's bleeding yet... to be continued. LOL

Jenny Johnsson it is dangerous, you have just to google healthy cookware, and you will see all the crap this pans leech to your food specially when they get scratched.

Samira Adams yes please. But I haven't found any. The consensus I have so far seems to be that the production of it is dangerous and nonstick in high temperatures is bad. But apart from that, the information a seems scarce.

Pyrex for sale in the US today is not the same as the Pyrex of yesteryear; the brand was purchased and the formula for the glass was changed. I will not purchase today's Pyrex because it does blow up. I have been told that old formula Pyrex is available in Europe. Another great American product, gone to shit, for a few cents on the bottom line.

Had a small Pyrex bowl explode in the microwave trying to melt a couple of tsps of butter for homemade popcorn. Took forever to get all those shards of glass out !!!!

I had Corningware ? explode in front of me when I was a kid; most horrifying experience actually. Shards is an understatemeny;I never saw splinters so fine. It didn't shatter like regular glass we are familiar with.
